		<description>I use Alton Brown&#039;s scone recipe (which yields very tender and moist scones) and find it very easy to work with.  He has you roll it out and cut it with a biscuit cutter, though I always just cut it into squares and smoosh in the corners.  The recipe is pretty similar to that above, and I find it pretty easy to work with if I chill it and flour it liberally before rolling (patting) it out.
